COWBOY CAVIAR
16 oz can black eyed peas,drained & rinsed
2 green onions,chopped fine
2 cloves garlic,
1/4-1/2 red bell pepper,
small can jalapeno peppers,not drained
2 T cider vinegar
2 T salad oil (NOT olive)
pepper & LA hot sauce to taste
Chill overnight
Serve with Fritoes or tortilla scoops
If spicey isn’t your thing,adjust to taste.

WI Cousin’s Cheese Spread
Mix:
8 oz shredded cheddar
8 oz cream cheese,softened
1/2 C mayo
1/4 CĀ each chopped stuffed green olives & green onions
2 T lemon juice
1/4-1/2 ground red pepper (aka cayenne)
Chill
Serve with crackers
[Leftovers are gone on toast in the morning!]

Ceviche de Corvina (marinated white seabass)
1 lb. Seabass, cut in small pieces
3 tablespoons onion, finely chopped
1 tablespoon celery finely chopped
2 tablespoons fresh coriander, chopped
2 cups lemon juice
salt, pepper and Tabasco Sauce to taste
1/2 teaspoons Worcester Sauce
Combine all ingredients in a glass bowl. Let stand for at least 4 hours in the refrigerator.
Serve chilled in small bowls topped with catsup and soda crackers on the side.

Avocado and Tomato Salad
4 large cluster tomatoes, chopped
4 avocados, peeled, pitted and diced
1 red onion, thinly sliced
1/4 teaspoon ground black pepper, or to taste
balsamic vinegar
extra virgin olive oil
1. In a large serving bowl, toss together the tomatoes, avocados, and red onion. Dust lightly with black pepper
2. Mix balsamic vinegar and estra virgin olive oil to taste, and pour over salad.
3. Cover and chill for at least one hour before seerving, to blend flavors.

Hummus Party Platter
1 7(oz.) container of Original Hummus, or any other flavor
Assorted dippers, such as baby carrots, celery sticks, green and red pepper strips
Pita bread, split, cut into triangles (optional)
1. Arrange Hummus on large serving platter with vegtebales, pita triangle or chips, if desired.
2. Serve immediately.

Chicken Wing Dip
- recipe given to me by my friend Joan Duggan
1 – 1 1/2 lbs. Chicken Breast
8 oz. box Cream Cheese
Marie’s Blue Cheese Dressing
8 oz. bag 4 Cheeses Shredded Cheese
Chicken Wing Sauce
Boil chicken until cooked and let cool. Cut chicken into 1″ cubes. Smear cream cheese on bottom of glass baking dish. Add blue cheese dressing. Place chicken in zip-lock bag or bowl – add chicken wing sauce and coat chicken. Add chicken to blue cheese and cream cheese mixture. Sprinkle shredded cheese over chicken. Bake at 350 until cheese is completely melted. Serve with Tostitos scoops tortilla chips, celery and/or carrot sticks.
For added flavor – marinate the chicken in wing sauce prior to cooking.

Artichoke Crabmeat Dip
1, 8 oz package of softened cream cheese
1 cup of mayo
1 garlic clove, pressed and chopped
1, 14 oz can of artichoke hearts, drained and chopped
1, 8 oz package of imitation crab meat
3/4 parmesan cheese, grated
Pepper
Preheat oven to 350 degrees. Combine cream cheese and mayo,, mix well. Add garlic, artichoke hearts, crab meat and parmesan. Mix well. Add black pepper. Spoon into dish and bake for 25-30 minutes until golden. Serve warm with crackers or pita chips!

Fruit Salsa
3 granny smith apples, peeled
3 kiwi, peeled
1 qt. strawberries
chop together and then add 2 tablespoons brown sugar, 2 tablespoons jelly and 1 tablespoon lemon juice, mix together.
serve with cinnamon graham crackers
Very Good.

Buffalo Chicken Dip
2 – 10 oz. cans of chicken, drained
2 – 8 oz. packages cream cheese, softened
1 cup Ranch dressing
3/4 cup red hot sauce
1 1/2 cups shredded cheddar cheese
Heat chicken and red hot until heated through. Stir in cream cheese
and ranch dressing. Cook, stirring until blended and warm. Mix in half the cheddar cheese
and transfer to a slow cooker. Sprinkle remaining cheese over the top and cook on low heat until
hot and bubbly.
Serve with tortilla chips.

Bean Dip
2 cans of low fat refried beans with a hint of lime
2 packages of cream cheese
1/4 cup salsa
Mix all together in a sauce pan until melted and mixed well. Serve with tortilla chips.
