Blueberry Pasta Fruit Salad
1 packet of three cheese tortellini pasta – or any for 6 people
1 cup fresh blueberries
1 cup sliced fresh strawberries
¾ cup of green grapes
¼ cup of almonds – sliced or crushed
1 can mandarin orange segments – drain these
½ cup of poppy seed dressing
Cook pasta and then empty into a large bowl. Add all salad ingredients and pour salad dressing over and toss lightly. Store in fridge until ready to serve.

COWBOY CAVIAR
16 oz can black eyed peas,drained & rinsed
2 green onions,chopped fine
2 cloves garlic,
1/4-1/2 red bell pepper,
small can jalapeno peppers,not drained
2 T cider vinegar
2 T salad oil (NOT olive)
pepper & LA hot sauce to taste
Chill overnight
Serve with Fritoes or tortilla scoops
If spicey isn’t your thing,adjust to taste.

Broccoli Slaw with Ramen
[from the NE aunt]
1 bag broc slaw
1 pkj chicken ramen noodles (save seasoning pkt),crushed
1 pkg slivered almonds
1 sml jar of sesame seeds
Boil for 2 mins:
1/2 C vinegar
1/2 C sugar
3/4 C salad oil
2 T soy sauce
raman seasoning pkt
Add dressing to broc & toss with noodles & almonds.

Ceviche de Corvina (marinated white seabass)
1 lb. Seabass, cut in small pieces
3 tablespoons onion, finely chopped
1 tablespoon celery finely chopped
2 tablespoons fresh coriander, chopped
2 cups lemon juice
salt, pepper and Tabasco Sauce to taste
1/2 teaspoons Worcester Sauce
Combine all ingredients in a glass bowl. Let stand for at least 4 hours in the refrigerator.
Serve chilled in small bowls topped with catsup and soda crackers on the side.

Bacon Wrapped Pineapple
(Linda Wooten, great summer appetizer)
1 can of pineapple chuncks
1 pound sliced lean bacon, slices cut in half
-Cut bacon strips in half making 2 equal size pieces.
-Wrap each half-strip of bacon around a pineapple chunk.
-Pierce it with a toothpick and place on a baking sheet.
-Bake until the bacon is crispy, about 15-20 minutes.

Watermelon and Feta Salad
(Made this over the weekend…refreshing and delicious!)
1 bag mixed baby greens or baby spinach
1 box crumbled feta cheese
1 1/2 cups watermelon (cut into bite sized pieces with seeds removed)
1/2 cup red onions (diced)
1/2 cup salted-roasted sunflower or pumpkin seeds
red wine vinaigrette (add to your preference)
dash of salt & pepper
-Combine all ingredients, toss and serve!

3 Cheese Mac and Cheese Bake
(Made this over the weekend, thick and cheesy!)
1 box of elbows (cooked and drained)
1 cup Sharp Yellow Cheddar (shredded)
1 cup Gruyere Cheese (shredded)
1 can of Campbell’s Condensed Cheddar Cheese Soup
1/2 cup of milk
2 eggs (beaten)
dashes of each: salt, pepper, mustard powder, cayenne pepper, nutmeg & paprika.
For topping:
1/2 cup of breadcrumbs
1/2 stick of butter
-Put cooked elbows in a casserole dish.
-Combine all remaining ingredients (except topping) in a bowl and mix throughly.
-Pour mixture over elbows in casserole dish.
-Mix to combine all ingredients.
-Top with breadcrumbs and pinches of butter.
-Bake for 30 minutes at 350 degrees or until top is browned and cheese is melted.

Green Beans with Toasted Almonds
(great with fish)
1 1/2 lbs. Fresh green beans (ends trimmed and then cut in half)
1/4 cup of Sliced almonds (found in baker’s aisle)
2 cloves of garlic (chopped/minced)
2 plum or roma tomatoes (diced)
3 tablespoons of olive oil
Salt and pepper to taste
1/4 cup of water
-In a frying pan, sautee almonds in olive oil until browned but not burned.
-Add garlic cloves, tomatoes, green beans and water.
-Lower heat and continue to steam cook on low-medium heat for about 10 minutes.

Spinach Salad
2 slices crispy fried bacon
1 clove garlic
1 10 oz. pkg. fresh spinach
1 medium onion
1 carrot, grated
Crumble bacon. Rub salad bowl with garlic clove. Wash and remove stems from spinach. Blot spinach very dry. Cut onion into thin slices. Break spinach into bite-sized pieces and put into salad bowl. Add half of onion slices and all of carrot. Top wiht 3 tablespoons salad dressing. Toss salad with 2 forks until all leaves are coated with dressing. Sprinkle salad with remaining onion rings and crumbled bacon.

Spinach Salad Dressing
1/3 cup tomato juice
2 tbsp. salad oil
1 tsp. salt
3 tbsp. vinegar
3/4 tsp. dry mustard
1 tsp. grated onion
In a screw top jar, cup size or larger, put all the salad dressing ingredients, screw top tichtly onto jar. Shake well.
